Blame it on the Carrot Cake!

My late Great-Aunt Lois Diamond used to bake the most delicious carrot-cakes during the holidays. These cakes brought her notoriety at Tank Automotive Command (TACOM) in Warren, MI, and her cakes were the centerpiece at every holiday family dinner. Before her passing in 2005, my mother inherited her secret recipe, who in turn passed it on to me when I moved to the Cleveland Metro area in 2010.
In the years leading up to the pandemic, I would bake these for office potlucks where folks would beg for the recipe. Even today, co-workers from several jobs ago inbox me on LinkedIn for the recipe! Then almost a year into the pandemic, during a "pod" gathering, my friends prompted me to create a bakery with Nanny Lois's Original Carrot Cake as the centerpiece - I sold a cake that day, in fact!
We feature not only the Carrot Cake, but also several family dessert recipes - like my mother's Red Velvet, my cousin's Lemon Pound, and my favorite Chocolate Ganache cakes! I am constantly at home perfecting my techniques for many other family recipes soon to be added to the menu. In the spirit of Nanny Lois, our aim is to provide the best quality desserts delivered ON TIME. So for the time being, our market is limited to the Cleveland/Akron Metro areas....but as we slowly grow and improve, who knows what the future holds!
